Date Balls recipe (vegan, gluten free & dairy free)

Cooking is a lot like serving God. The Bible gives us the ingredients and the method to live a life that is pleasing to God and like cooking, practice makes perfect! 

If we forget an ingredient or skip a step, the end product can look or taste completely wrong. Much like following the teaching of the Bible, if we skip a step we can start veering off the track very quickly.

Joshua 1:8 says “Study this book of instruction continually. Meditate on it day and night so you will be sure to obey everything written in it. Only then will you prosper and succeed in all you do.” (NIV)

Just like cooking the more love and time you put into it the more enjoyment you get out of it, and if you share it around with others your heart is filled.

Here is a recipe that brings me a lot of joy to make and share with others.

Date Balls (vegan, gluten free & dairy free

Ingredients:

500g pitted dates

1 cup cocoa powder

1 1/4 cups desiccated coconut

1 teaspoon cinnamon powder

1/3 cup desiccated coconut (for rolling)

Method:

1. Place rolling coconut in a bowl to the side. 

2. Place all other ingredients in food processor and blend for 1 minute.

3. Add 4 tablespoons of boiling water and blend for another 30 seconds, scrape down the sides, check the consistency and add 1 additional tablespoon of boiling water if mixture is not smooth, and blend for another 30 seconds, or until mixture is finely chopped and smooth. Scrape down the sides one last time and blend for another 30 seconds.

4. Line a baking tray with baking paper.

5. Roll a tablespoon of the mixture into a ball and then roll in desiccated coconut that was set aside. Place finished ball on tray and repeat.

6. Place tray in refrigerator until balls are firm and ready to eat!
